In 1996, Basque chefs I\u00f1aki and Mikel L\u00f3pez de Vi\u00f1aspre opened the very first Sagardi in Barcelona. This Basque regional restaurant based on their grandmother’s recipes became a resounding success and expansion followed. Expectations for the opening of Sagardi Amsterdam, the first in the Netherlands and the eleventh worldwide, were therefore high, until the Covid-19 outbreak forced the Amsterdam plans to be put on the back burner for a while. <\/b>In the meantime, Sagardi has stoked the fire again and at Sagardi Amsterdam you can get acquainted with the best of the Basque Country until late at night. Both inside and outside – on the lovely terraces on the Spuistraat and on the Singel – there is plenty of space for guests to enjoy themselves carefree and the RIVM guidelines are strictly observed. <\/b><\/div>\n
Help for the vulnerable in Barcelona <\/b>With family at the heart of their business, I\u00f1aki and Mikel decided not only to postpone the planned opening of Sagardi Amsterdam last March, but also to suspend all their activities worldwide, in order to provide support in their hard-hit home country. Since then, Sagardi has provided 5,000 free three-course meals a day for vulnerable elderly people in Barcelona. Now that life is starting to pick up there too, the time had come for them to return to Amsterdam and give the city a piece of the Basque Country on the canal. <\/div>\n

From the Basque Country to the plate <\/b>True to the rich culinary traditions of the Basque Country, the product is always central. Nothing beats freshness and top quality. For this reason, everything – all vegetables from the garden, meat from the farms and fish from the North Sea – is delivered fresh. All products are imported directly from the Basque Country and are treated with the utmost care and respect to optimise their taste and texture. In this way, Sagardi offers something truly unique, because apart from the Basque Country itself, you will not find this range of fresh Basque products anywhere else! The wine list, which, in addition to an impressive selection of international wines, also features Basque wines, ciders and regional beers, is also unique in this respect. <\/div>\n

Pintxos bar<\/b> Pintxos are an essential part of Basque culture and have also earned their well-deserved place in Amsterdam. In the inviting pintxos bar at the front of the restaurant, you can choose from a very wide selection of irresistible pintxos from Donostia, which will vary per season. Sagardi’s pintxos bar is a wonderful place to taste extensively and forget about time, but also to then move on to the restaurant. The Basque grill<\/b> It is the fiery heart of every Sagardi: the grill, designed and built based on 25 years of knowledge and experience by I\u00f1aki. Sagardi’s chefs have mastered the age-old tradition of the Txuleton to perfection. The hand-selected, matured beef comes from traditionally kept Vaca (ex-dairy cows 9-13 years old). The premium Buey beef (Galician oxen 14-20 years old) has undergone a maturation process of at least four to a maximum of six weeks, which ensures extraordinary textures and flavours of the land, milk and grass. Fish lovers are also catered for. At Sagardi, the perfectly prepared, daily fresh fish from the North Sea is presented whole and filleted at the table. Grandmother’s kitchen<\/b> From grandmother’s kitchen come, among other things, the now iconic cod omelette, Txangurro (crab bisque) Donostia style, Txipirones (baby squid) with seasonal vegetables and oxtail stewed in Rioja. But whether you order piquillo peppers, grilled artichokes, a salad from the gardens of Hernani or a shrimp carpaccio: at Sagardi you will get only the very best of the Basque Country on your plate. <\/div>\n
