20 Apr Hayman’s Rare Cut: the gin the maker drinks himself
Thousands of different gins are on the market.
But if you really want something special, what do you take?
The master’s choice: Hayman’s Rare Cut London Dry Gin.
by Gandor Bronkhorstphotography Albert van Beeck Calkoen/Hayman’s Of course, every distillery says that its master distiller the very master is of all masters.
And rightly so, a distillery is a universe and the master in it is Master of the Universe.
But that doesn’t necessarily make the gin good, of course.
To understand what we mean, by real gin, it is good to understand where we are talking about Hayman’s True English Gin.
Hayman’s is the only family distillery where gin is still made the traditional way: in a slow, two-day distillation process.
Only ten very carefully selected botanicals are distilled along with British grains in traditional copper stills.
Exactly as the Hayman family’s forefathers did in 1863.
The makers are especially proud of the role coriander seed plays in their distillate.
Other flavorings include licorice, angelica root, nutmeg, cinnamon, cassia bark, orris root and dried lemon and orange peels.

Hayman’s Rare Cut London Dry Gin
That by itself makes for a great London Dry Gin, but we promised you at the beginning of this article “the choice
of the master,” so you get it.
You see, the Hayman’s Rare Cut London Dry Gin is a very special, Limited Edition.
Which master Christopher Hayman himself put the finishing touches on.
This special gin was produced to honor a special moment.
In fact, in October 1969, Christopher Hayman joined the family business, of which he remains a major part today.
The result is a powerful, but also a bright and balanced True English Gin.
Like mr.
Hayman himself, it is a gin with a robust character: namely, an ABV of 50%!
As you might expect, the flavor profile is that of a classic London Dry, with juniper, fresh citrus and even some peppery undertones.
Although it is a very balanced London Dry Gin, the high alcohol content gives you an even stronger intensity of the botanicals, with warming spices in the background.
